Ingredients
  

  • 1 3/4 lb leftover prime rib
  • 1 16 oz can of pinto beans drained and rinsed
  • 1 16 oz can of black beans drained and rinsed
  • 1 16 oz can of kidney beans drained and rinsed
  • 4 cups beef stock or broth
  • 1 tbsp minced onion
  • 1 tbsp minced garlic
  • 3 tbsp chili powder
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tbsp chipotle powder
  • arrowroot optional to thicken, amount as required

Instructions
 

  • Chop up prime rib into bite sized pieces roughly 1/2" or so in size.
  • Add all of the ingredients to a Dutch oven or large pot.
  • Cook over medium-high heat just to a boil, stirring frequently.
  • Cover and reduce heat to simmer, stirring occasionally until ready to serve, ideally for at least an hour.
  • Serve and enjoy!
