Simple and Tasty Garlic Parmesan Baby Potatoes

Ingredients
  

  • 1.5 lb baby yellow potatoes
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1 tsp salt plus more for potato water
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 cup parmesan cheese plus extra for topping

Instructions
 

  • add the potatoes to a medium pot
  • add water to the pot to cover the potatoes by about an inch
  • add salt to the water liberally (about 1 to 1 1/2 tsp)
  • bring water to a boil and then boil the potatoes until fork-tender, approximately 10 minutes
  • combine sour cream, heavy cream, salt, garlic powder, black pepper and parmesan cheese in a medium saucepan
  • heat sauce over medium-low head, stirring or whisking frequently until combined
  • reduce heat and continue to stir until potatoes are ready
  • drain the water from the potatoes
  • and the potatoes to a large bowl and pour the sauce over the potatoes
  • gently fold the sauce into the potatoes and serve
