This garlic parmesan baby potatoes recipe is pretty versatile and can be served with many different things. I served it with my boneless pork ribs, but it will go with just about any main course. I broke down some of the basic steps for making this recipe below. If you prefer, you can jump right to the recipe card.
What you need to make garlic parmesan baby potatoes
This is a fairly basic recipe, I just grabbed some simple seasonings that I had on hand. If you prefer fresh garlic, you could replace the garlic powder with fresh garlic. The popular conversion is 8 cloves of garlic per tsp of garlic powder.
- baby yellow potatoes (you could use Yukon gold potatoes if you can find baby ones or baby red potatoes as well)
- sour cream
- heavy cream
- salt
- black pepper
- garlic powder (or fresh garlic using the conversion provided above)
- grated parmesan cheese
You will also need a large bowl, a medium/large pot, and a medium saucepan.
If you want to add some depth of flavor, you could add a teaspoon of Italian seasoning or onion powder or garnish with fresh parsley.
How to make garlic parmesan baby potatoes
This recipe requires that you pay a bit of attention to the sauce because it is a cream sauce so you will need to stir it frequently, if not constantly. Otherwise, this simple side dish is pretty much a 3-step process – boil, stir, and combine.
- The first step is to boil the potatoes. You can cut them if you want the baby potatoes to be even more bite-sized, or if you have larger potatoes.
- While the potatoes are getting up to boiling, you can combine the sauce ingredients in a saucepan and heat on the stove.
- Pour the parmesan mixture over the potatoes and serve.
Tips for boiling baby potatoes
- Use similar-sized potatoes for best results – if you have a wide variety of sizes, you may find yourself with some undercooked and/or overcooked potatoes. Overcooked potatoes will pretty much turn to mush.
- Salt the water – this sort of acts as a preseason for the potatoes and helps to bring out the flavor.
- Use only enough water to cover the potatoes by about an inch.
- Cook until fork tender (about 10 minutes) but not too soft, you are aiming for tender potatoes, not mushy ones.
- If you are going to cut the potatoes, you can cut them before or after cooking, however, if doing it before, they will cook much faster and it is critical to make sure your pieces are as similar sized as possible.
