Meatloaf is one of those things that people love or hate. There doesn’t seem to be a middle ground. I never used to like meatloaf, but that’s because in the past it’s been dried out and really lacking in flavor.
Until now!
This amazing low carb meatloaf recipe is not only full of flavor, it’s super moist and a great fit for a keto diet. While it has some similarities to our gluten-free meatloaf recipe, it does have a somewhat different flavor profile because of our secret ingredient. It is certain to become a family favorite.
This secret ingredient is actually one we use a lot around here: crushed pork rinds. If you have seen and/or tried some of our other low carb recipes​, you know that it is a fantastic alternative to traditional wheat based panko and adds increased flavor that you just don’t get from bread crumbs. It is a great low carb alternative and plays a part in producing a tender meatloaf.
We used pork rind panko in the following recipes:
Other low carb flours such as almond flour and coconut flour can be used as well, but I think pork rinds are the best way to make a low-carb meatloaf that is even better than a classic meatloaf recipe.
Things you need for this amazing low carb meatloaf recipe
Kitchen tools:
- loaf pan (optional but recommended)
- large bowl
- glass baking dish (a baking sheet should also work)
- parchment paper (optional)
- saucepan
- meat thermometer
Meatloaf ingredients:
- ground beef
- ground pork (I think you could use ground turkey in a pinch)
- heavy cream
- whole milk (or extra heavy cream)
- pork rind panko or crushed pork rinds
- salt
- black pepper
- minced onion
- paprika
- ground mustard
Sauce ingredients:
- tomato sauce
- minced onion
- salt
- butter
- Worcestershire sauce
Note: if you don’t want to make your own sauce, you could use sugar-free ketchup or sugar-free bbq sauce.
I buy Bacon’s Heir pork panko, you can get it on Amazon. But if you prefer to make your own pork rind panko, the video below has 3 ways to make your own.
How to make this amazing low carb meatloaf recipe
- preheat the oven
- combine all the meatloaf ingredients in the large mixing bowl
- add the meat mixture to the loaf pan and then flip the loaf pan over onto the baking dish or form the meatloaf mixture into a loaf shape in the baking dish or sheet pan if you don’t have a loaf pan
- bake until it reaches a fully cooked internal temperature
- while the meatloaf is cooking, combine all the sauce ingredients in a saucepan and simmer until the meatloaf is done

I made this recently and my family, who do like meatloaf, thought this tasted better than traditional meatloaf. I really believe that it’s the crushed pork rinds!

Amazing Low Carb Meatloaf Recipe
Equipment
- 1 1.5 QT glass loaf pan optional
Ingredients
For the Meatloaf
- 1 lb ground beef as lean or fatty as you prefer – leaner means less grease in the pan after cooking
- 1/2 lb ground pork
- 1 egg beaten with a fork
- 6 oz whole milk see notes below
- 2 oz heavy cream
- 1 cup pork rind panko store bought or crush your own
- 1 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tsp minced onion
- 1/4 tsp paprika
- 1/4 tsp ground mustard
For the Red Sauce
- 1 can tomato sauce 15 oz
- 1 tsp minced onion
- 1/2 tsp salt
- 2 tbsp butter softened
- 1/4 tsp Worcestershire sauce
Instructions
- Preheat oven to 350 degrees F
- Combine all the ingredients very thoroughly in a large bowl
- Pack the mixture firmly into a greased loaf pan, if you don't have a loaf pan, you can form the loaf with your hands, it just may not be packed as tightly
- Grease the baking dish with butter (olive oil spray works as well)
- Turn the loaf pan over and let the meat slide into the baking dish
- Bake for 1 hour or until done (internal temperature of 160 degrees)
- While the meatloaf is cooking, combine all the ingredients for the red sauce and put in a saucepan
- When there is about 15 minutes left to cook on the meatloaf, simmer the sauce on the stove stirring occasionally until ready to serve with the meatloaf
- Slice the meatloaf* and serve with the red sauce

This is such an easy recipe to make, it has simple steps and simple ingredients and the cooking process couldn’t be simpler. The keto-friendly ingredients make it a wonderful recipe for a low carb diet, but honestly no one will even know that it’s low carb. This recipe makes a delicious meatloaf whether you are looking for low carb comfort food or just looking for something crowd pleasing.
