Easy and Tender Low Carb Pot Roast Recipe

This super tender low carb pot roast recipe is so easy to prepare and make in the slow cooker. It’s the perfect comfort food! A few key ingredients make this a flavorful and memorable dish the whole family will enjoy.
Whether you call it a Crock-Pot or a slow cooker, this is the quintessential Dined and Dashed Level 1 recipe because of how simplified the cooking process is in one of those type of set-it-and-forget-it pots.

Is beef high in carbs?
Beef has zero carb count. No matter what kind – beef brisket, roast beef, ground beef, steak, roasts, etc. Beef itself has no carbs which makes it perfect for any keto recipe you have in mind on a low-carb diet.
Does pot roast have a lot of carbs?
Before we get into the food part, I do want to make a disclaimer – the meat part of most slow cooker pot roast recipes is low carb – at least before you add the potatoes, and probably most are keto as well if you are just considering the beef. The real difference in pot roast recipes has to do with when you add potatoes and carrots. Some seasonings have carbs, but the amount they add to the recipe really are pretty negligible. So this low carb pot roast recipe isn’t super special except it does not add potatoes or carrots, and taste pretty darn good.
A traditional pot roast recipe with potatoes and carrots likely has anywhere from 15-20 grams of carbs per serving, maybe more.

What cuts of meat make the best pot roast?
When considering what cut of meat to use, a boneless beef chuck roast is the absolute best beef roast to use for your low-carb pot roast. Hands down. It is the best meat for slow cooking and the most likely to become fork tender. A rump roast or round roast is not tender meat, and even in the slow cooker will not result in the tender roast you want for pot roast.
Tools need for this keto pot roast recipe
You don’t need much for this recipe. A slow cooker as mentioned above, but you could also use a dutch oven and cook it on low heat (275 degrees for 3-4 hours – cook time will vary depending on size of roast) in the oven if you are looking from something easy but are going to be home all day so you can leave the oven on. Some people use an instant pot or pressure cooker but I’ve never tried it that way.
If you are going to sear your low carb pot roast before putting it in the slow cooker, you will also need a large pan for that, and you do need a small bowl to mix all of your ingredients together.

- bone-in or boneless chuck roast
- balsamic vinegar (or dry red wine)
- minced onion
- minced garlic
- Worcestershire sauce
- olive oil
- Kosher salt
- black pepper
- beef broth (optional)
There are a lot of different ways to season a low carb pot roast, and you honestly can’t go wrong with many of them, but the ingredients above are my go-to for the best flavor. other recipes may call for Italian seasoning, fresh parsley, fresh rosemary, garlic powder or tomato paste among others.
How to make this low carb pot roast recipe
As mentioned above, if you prefer to sear your roast before putting it in the crock pot, you can do that over medium-high to high heat in olive oil for 1-3 minutes per side. I do not sear mine because I think it tastes great without it and I never feel like taking the extra few minutes to do it. But you can if you want, there is no best way, it just depends on preference.
- Put the roast in the slow cooker.
- Mix the seasonings together with the olive oil and pour over the meat.
- Then set it and forget it!
Can you smell that? Oh, so good! Especially when you have been at work all day and come home to your low carb pot roast cooking in the slow cooker.

- 3-5 lb chuck roast (bone-in or boneless)
- 1/2 cup balsamic vinegar
- 1 tbsp minced onion
- 1 tbsp minced garlic
- 2 tbsp Worcestershire sauce
- 1/2 cup olive oil
- 2 tbsp Kosher salt
- 1 tsp black pepper
Instructions
- In a small bowl, combine all ingredients except the roast
- Add the roast to the slow cooker
- Pour the ingredients that you mixed in the bowl over the roast
- Cook on high for 8-10 hours or low for 5-6 hours
- Serve with your favorite low carb side dish
